The article deals with the problems of the domestic restaurant market in the crisis and post-crisis period, the main trends in its development in the coming years. The analysis of the factors influencing the formation of the restaurant business turnover with the help of regression equations is carried out in order to determine the quantitative assessment of these factors and to identify the most priority ones. The result of the study showed that the maximum degree of influence on the development of the domestic market of restaurant services have: consumer spending on food "out of home" per capita, the size of the average check 1 visitor, the number of institutions in the market.
