Abstract:

The article deals with the problem of ensuring quality food, which is considered as a whole and in relation to an individual manufacturer. In the field of quality, improvement measures should be taken to improve the system of safety and control of quality food throughout the chain  production, storage, transportation, processing and sale. To create a modern instrumental and methodical base, organizational structure of control over the quality and safety of food products is crucial.
