The article shows the features of the development of the market of bread and bakery products in the Republic of Bashkortostan. Excess of the actual consumption of bread over the recommended health standard is an indicator of poverty. Therefore, in the region production volumes reduce annually. These circumstances and the tough competition force manufacturers to cut production costs. This raises the question of the quality certification of bakery products and the need for the state regulation of the adjacent markets of grain and flour.
