Currently, when deficit problem is absent and consumption is limited to the possibilities of acquisition in fact only, the issues of rational consumption of are interested in either medics and dieticians or economists. The Ministry of Health of the Russia recommends change the structure of consumption of food products in the consumer basket, i.e. to increase by 12% annual consumption of dairy products. Dairy products occupy a leading position in the food ration of citizens in Russia and are an integral component of a balanced diet. For last decades the level of consumption of milk and dairy and in Russia has decreased to 233 kg on 1 person in a year that less than recommended norms. The dynamics of consumption of dairy products in the Krasnodar region, which is part of the South Federal District, is also negative. The last several years the consumption has steadily fallen due to solvency decrease in the population. The renewed growth in incomes creates preconditions for stabilization of milk and dairy products consumption. The planned values of domestic production of wholefood have already been achieved in almost all the names, and on dairy, according to calculations Ministry of Agriculture, can be achieved next six years. The leaders in the industry are Tatarstan and Krasnodar region. There is the roadmap to increase diary production in Kuban in five times by 2030 year. Krasnodar region provides itself with dairy products for 70-80%. There is about 20-30% of dairy products produced in Krasnodar region are exported. There are produced 4.5% and processed more than 6% of milk in the country, Kuban is top region in Russia according to the volume of milk processing. The 5 largest factories account for 83.1% of the milk processing market in the region. The research of the market condition of dairy in Krasnodar territory revealed the potential of the market share increasing for local producers under import substitution conditions.
